Prep time - 5 mins || Cooking time - 15 minutes || Serves - 1 1. In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes. 2. Add spinach, season with a pinch of salt and pepper mix until the spinach wilts down. 3. Add cream cheese, half & half cream, and Parmesan cheese. Stir until the cream cheese melts and the mixture is smooth and creamy. 4. Heat a separate skillet on medium high heat, add remaining oil and butter. 5. Season Cod Portion on both sides with salt and pepper and place on the hot pan. 6. Cook 6 minutes on first side and flip Fish over and cook other side an additional 5 minutes, until cooked through and browned. 7. Spread the spinach mixture on the bottom of plate and top it with Cod.

Bring salted water to a boil, cook the pasta according to the package instructions for 8-12 minutes until cooked through, and reserve 1/2 cup of pasta water before draining. 2. Sauté onion and red pepper in butter for 5 minutes, add garlic, then shrimp with Cajun seasoning. 3. Cook shrimp for about 5 minutes until pink and opaque. 4. Add diced tomatoes and cream to the skillet with the shrimp, stir, and cook for 5 minutes. 5. Slowly mix in 2 tablespoons to /4 cup of reserved pasta water into the sauce. 6. Cook for 5-10 minutes until the sauce thickens to your desired consistency. 7. Remove from heat, then add parmesan cheese and cooked pasta to the skillet and stir to combine. 8. Top with extra parmesan cheese and parsley if desired, and serve immediately.
